Crunchy Almond Tuiles!
Sweet and Crisp! These almond tuiles are divine and they complement all kinds of treats. Enjoy them between scoops of ice cream or sorbet. Add some crunch and sweetness to your dessert. Handle with care! These super thin "wafers" are very brittle and break easily, so please be gentle and handle them with care. Falling to pieces! Did you break any? Are they falling to pieces between your fingers? Don't throw them away...crunch them up even more, and use them for toppings!
Ingredients:1½ oz (50 grams) soft, unsalted butter 1½ oz (50 grams) confectioners sugar 2 tablespoons of finely chopped almonds (blanched) 1 tablespoon of flour 1 egg yolk (about ½ oz, 15 grams) Method: First beat the butter and confectioners sugar to a smooth paste. Add the almonds and flour and beat thoroughly. Then beat in the egg yolk. Paste the mixture on to a baking sheet in circles about 3-4 inches (8-10 cm) in diameter. Bake the wafers at 375˚F (190˚C)in the middle of the oven for about 3-4 minutes.

Try a caramel tuile instead of the almond tuiles.
Caramel tuiles can be formed immediately after removing them from the oven. Create your own shapes and styles of tuiles.
