Crisp & Crunchy Caramel Baskets!
Fruit Baskets?Caramel baskets can be used for a variety of desserts. I use them for fresh or marinated fruit and of course for ice cream. Dip the top into melted chocolate or coat the inside with your favorite sauce, before adding a few scoops of ice cream.
Perfect serving dish! Now you don't have to worry about having the perfect serving dish for your dessert, just make crunchy baskets for everybody. Not only do they taste great, they look great too.
Ingredients for 6 baskets:2½ oz (80 grams) of sugar 1½ oz (50 grams) of very finely chopped almonds 2½ oz (80 grams) unsalted butter 1½ oz (50 grams) of glucose Mix all of the ingredients to a smooth mass. Make 6 circles on a baking sheet about 6 inches (15 cm) in diameter. Bake in the middle of the oven at 325˚F (170˚C) for about 10 minutes. (Until golden brown). Remove from the oven and place the caramel over the bottom of a bowl, cup or glass (depending on the shape you prefer). They must be removed from the baking sheet immediately after you've taken them from the oven, as the caramel hardens very quickly. If this happens place the baking sheet back in the oven for 20-30 seconds and the caramel will again become soft and workable.
