A Coconut Ice Cream Recipe
with a Touch of Lime!



Coconut and Lime ice cream




Exotic Ice Cream!

Try this coconut ice cream with a touch of lime. Serve a frozen treat with an exotic taste for your friends and family. A truly delightful and refreshing ice cream recipe.




coconut Ingredients: (4-5 servings)

13 fl oz (400ml) whole milk
13 fl oz (400 ml) double (heavy) cream
1 vanilla bean
10 egg yolks
2 oz (70 grams) of sugar
1 oz (30 grams) desiccated coconut
Grated zest of ½ lime
3 fl oz (100 ml) freshly squeezed lemon juice
1¾ fl oz (50 ml) coconut milk (you can use canned coconut milk for this recipe)

Method:

Combine the whole milk and cream in a saucepan. Cut the vanilla bean and remove the seeds, add both the seeds and the bean to the saucepan. Heat the mixture until just before boiling point.
In the meantime whisk the egg yolks and sugar in a bowl. Pour the warm milk mixture over the eggs a little at a time, whisking continuously. Now transfer the mixture back to the saucepan and warm over low heat until it thickens, remember to stir continuously and do not boil. (The temperature should not exceed 183˚F (84˚C) check the temperature with a thermometer if necessary).
Strain the mixture. Combine the coconut, lime zest, lemon juice and coconut milk in a bowl. Then add it to the ice cream mixture. Cover and place in the refrigerator until completely cool.
Transfer the mixture to an ice cream maker and follow the instructions for your machine.

Or transfer the mixture to a suitable container and place in the freezer. After 30 minutes remove from the freezer and stir. Repeat the process every 30 minutes until the ice cream becomes firm.
Place in the refrigerator 10-15 minutes before serving.
