Pineapple Ice Cream

Ingredients:

1 pound (500 grams) of freshly cut pineapple
5 ounces (150 grams) of sugar
1 cup (200 ml) heavy cream
Lemon juice

Cut the skin off the pineapple, make sure to remove all the eyes. Slice the pineapple and cut it into small pieces.
(Some pineapples have really soft cores that can be eaten, but if the core is hard cut it out, just make sure you've got the amount you need).

Put the pineapple into a container and freeze for a couple of hours.
Make sure it's completely frozen.

Take the now frozen pieces and put them in a blender with the sugar and cream.
Mix the ingredients to a smooth mass.
Add lemon juice to taste.

If your using an ice cream maker just follow the instructions for your machine.

If not pour the mixture into a suitable container and freeze.
After about one hour take it out and give it a good "whipping".
Return it to the freezer for another hour and repeat 4 or 5 times.

This prevents ice crystals from forming and gives a much smoother result.
