Redcurrant Sorbet!

Redcurrant Sorbet

Summer Fruit!

Try a tasty redcurrant sorbet. It's time to harvest those gorgeous looking red currants.
Most people have no idea what to do with them (aside from making jelly).
Use these delicious summer berries to make yourself a sweet treat.

Ingredients:

14 oz (400 grams) red currants
5 oz (150 grams) sugar
¼ tablespoon of glucose

Method:

Remove the red currants from the stems and rinse thoroughly. Place them in the freezer for a couple of hours. Combine the sugar, red currants and glucose in a blender or food processor and mix for a few minutes. Transfer the mixture to an ice cream maker and follow the instructions for your machine.

Or transfer to a suitable container and place in the freezer, after 30 minutes remove and stir the mixture thoroughly. Return to the freezer for another hour and repeat the process. Do this every hour until the sorbet becomes firm.

Don't limit yourself to making redcurrant sorbet (or jelly). Try a syrup or sauce, you can even make redcurrant ice cream.
