A Crisp & Crunchy Caramel Tuile!

Tuiles with your dessert!

Enjoy a sweet “wafer” with your ice cream or sorbet dessert. Use them with all kinds of sweet treats.





All Sorts!

These super thin wafers can be formed into any shapes and sizes. Don’t restrict yourself to the traditional shape; just let your imagination flow. How about heart or fan shaped? Or maybe round so you can use them in-between scoops of ice cream. Fold them up and put some chopped fruit inside, “seal” them up with some tempered chocolate.
Create your own style!





Ingredients:

2¼ oz (75 grams) of soft unsalted butter
2¼ oz (75 grams) sugar
4 tablespoons of flour
1 tablespoon of glucose

Method:

Heat the oven to 325˚F (170˚C).
Combine all the ingredients in a bowl and whisk until the mixture becomes smooth. Now you can “paste” the mixture onto a baking sheet in the form and size you want. Remember to make them very thin.
Bake the "wafers" in the middle of your oven for about 10 minutes, (until they become a golden brown color). Remove from the oven and after about 10 seconds you will be able to “lift” them from the baking sheet and form it to the shape you desire.
Be quick about it! It doesn’t take long for them to set, if this happens try popping them back in the oven for a few seconds.
Watch out they are very brittle, keep them in an airtight container if you’re not going to use them right away.
