Watermelon Granita!

Hot, hot, hot!

When the temperature rises it’s time for a cool treat, and this watermelon granita is a perfect thirst quencher.

Ripe “tiger”!

There are several varieties of watermelon, I’ve chosen the dark and light green stripy “tiger” melon for this recipe. But you can choose any melon, just pick one that you prefer. Make sure that your melon is fully ripe when you buy it, once picked they do not improve in flavor!

Ingredients:

4½ oz (125 grams) of sugar
9 fl oz (250 ml) water
2 lb 2 oz (1 kg) watermelon flesh
Juice of 1 lemon

Combine the sugar and water in a saucepan and heat until the sugar dissolves. Boil the mixture for 2 minutes and then remove from the heat and cool.
Cut the melon and discard the skin, prise out the pips as you cut the melon into cubes.
In a blender or food processor mix the melon with the syrup. Add lemon juice to taste. Pour the mixture into a suitable container and freeze for about 1 hour. Ice crystals will begin to form around the edges of the container, break them up with a fork. Return to the freezer and repeat every hour until you have a glistening mass of crystals.
Serve within a couple of days.






Did you like this watermelon granita recipe? How about a honeydew melon sorbet? A sorbet differs from a granita in that it contains more sugar and it doesn’t have a mass of jewel like crystals, a sorbet has a more smooth frozen texture.
